Okay… I don’t really hate kale, it’s just that I’m not sure how it became a “thing.” To me, it’s a lovely plant for the garden, but honestly, I find it to be tough no matter how I prepare it. Yes, I know it’s healthy and I know I should like it, but to me, it’s like celery… my LEAST favorite veggie on the planet. Don’t get me started. It’s stringy and weird and for some reason, I have a throwback to childhood where it involved Cheez Whiz.
That said, I’ve tried endless ways to prepare it — and I finally gave up. It just didn’t taste good to me. (If you have a recipe, please post it!) I mean, really — there are enough other healthy options to enjoy. And since I am in the midst of my new journey — which includes losing my election fat (before the next election) there are a ton of options. My Garlic and Cheese Smashed Cauliflower comes to mind. Dreamy, creamy and 2 WW Smart Points for those counting. (For those who aren’t counting, it’s delish.) But there’s also times when I just say fuck it and eat something ridiculously decadent like “Death by Brie.” (Yes, you read that correctly and my new recipe will be posted soon.)
In any case, my philosophy is: eat what you want… but more importantly, eat what you like. And that’s why I decided to try Weight Watchers. I don’t feel like I am dieting and I have to say, after 3 weeks — so far, so good: I am eating everything I want and like. Except kale.
