I love making soup, especially in the fall. I am always looking for new and easy recipes that take little or no time. This fits the bill. This easy Instant Pot Carrot and Cauliflower Soup takes 5 minutes, and it’s 1 WW Smart Point. It’s also vegan and vegetarian.
This recipe is simple and what I like about it is you can make it in an instant. Literally. So, here’s the skinny on making Instant Pot Carrot and Cauliflower Soup…. but if you want to make it turn into “Cream of Italy” — keep reading!
Here’s what you need:
Add an onion, some garlic, and here’s what you end up with:
Now, I can’t guarantee that you’ll end up with “Cream of Italy” when you add a dash of almond milk, but go for it. I couldn’t have planned this shot if I tried…
Oh… and sometimes, I even add a bit of pesto when I want to change the flavor:
Instant Pot Carrot and Cauliflower Soup in 5-minutes
Cream of Italy? Nope it’s easy Instant Pot Carrot and Cauliflower Soup – Ready in 5 minutes. Vegan. 1 WW Smart Point.
1 head of cauliflower
5 medium carrots
1 medium onion
2 garlic cloves, fresh. Or I use Dorot.
1 tsp Extra Virgin Olive Oil
2 cups Pacific Organic Simply Stock, Vegetable, Unsalted
1 tsp Salt
1 tsp Pepper
Cumin – optional – add as as you like
Chop up the veggies into chunks.
Turn on the Instant Pot and select Saute.
Add olive oil, salt and pepper, and saute the garlic and onion until it sweats.
Turn off saute.
Add the carrots, cauliflower, vegetable stock… and cumin if you want.
Secure lid. Turn valve to Sealed.
Pressure cook: 5 minutes.
When it beeps — quick release.
Remove the veggies and place them in a food processor and blend.
Add a touch of almond milk if you want to add a bit of extra creaminess.
