Growing up, my mother, Bernice would make salmon patties once a week. That may seem like a lot, but they were my favorite and my grandma also loved them. Salmon patties are one of the easiest homemade dishes you can make and whether you call them salmon cakes or salmon burgers, they’re tender, flaky, and crispy all in one bite. Salmon patties are down-home good cooking.

Salmon Patties Recipe
While Bernice had a huge repertoire of dishes, come Wednesday, she’d get out her mixing bowl, assemble the ingredients, and in a matter of 20 minutes, everyone’s mouths were watering. The secret is simple: Keep it simple. All it takes is 1 bowl and 5 ingredients.
The best part is you probably have all the ingredients ready to go. There’s nothing fancy needed. And if you don’t… no sweat, there are easy substitutions you can make. For instance, the recipe calls for panko breadcrumbs or cornflakes. You can use either.
Salmon Patty Ingredients
- 14.75 oz can of salmon – pink or red
- 4 eggs slightly beaten
- salt and pepper to taste
- 1 cup sour cream
- 1 cup crushed corn flakes (or panko)
- 2 tbs minced green onion or any kind of onion
- 2 tbs butter and oil to fry/saute
Substitutions for Panko Breadcrumbs:
- Saltines
- Rolled Oats
- Corn Flakes
- Potato chips
As far as choosing which type of salmon to buy, you can use either pink or red salmon — both work. I don’t have a preference, I buy both.
Canned Salmon vs Fresh Salmon
Why use canned salmon? It has all of the nutrients of fresh salmon at half the cost, and while this recipe is budget friendly, it tastes like a million bucks. Think about how much fresh salmon costs per pound. Could be anywhere from $8.99 per pound to $20+ per pound depending on where you shop. A can costs about $4-$7- ish dollars. And you don’t have to go to all the trouble of broiling, poaching, or baking salmon. If you want to use fresh salmon to make patties, you can, but this is really easy and you can make it at a moments notice… because you probably have a can in your pantry — right next to the tuna fish. How to Make Salmon Patties
Doesn’t get any easier than this: you need 1 bowl, 5 ingredients, and a frying pan.
- Pour off juice from salmon and remove skin and bones.
- Flake salmon and mix all ingredients in a bowl.
3. Heat a frying pan or cast iron skillet and coat it with oil and butter. I do this by look… about 2 tbs butter and some oil… so it coats the pan… you don’t want to do a “deep fry” use just enough oil so they’ll be crispy.
4. Spoon salmon mixture — a heaping tablespoon-ish — into frying pan to make patties. Flip when brown on one side. Makes about 12 patties.
And when they’re crispy on the edges… serve and enjoy with sides of your choice.
What to Serve With Salmon Patties
That’s easy. Homemade applesauce. It’s my other favorite recipe and ridiculously easy to make. Check out my homemade applesauce — it requires NO PEELING and it’s ready in 4 MINUTES. Bernice also liked to serve salmon patties with a dollop of sour cream.
For a side dish, I also like to serve these salmon cakes with warm, crusty bread and butter, or toss them on a bun and make a salmon burger loaded with purple onion, tomato, and lettuce. Serve with fries, a salad, or mac and cheese. Then, there’s my other favorite side dish: corn pudding. Pure comfort food.
