Dave was inspired to make tomato cupcakes with a twist by Sylvia Plath's tomato spice cake, which called for olive oil, sun-dried tomatoes, and basil. Made with tomato paste and pureed sun-dried tomatoes, the resulting cupcakes have a luscious, spicy tomato cake. Dave made a white chocolate ganache for the icing by steeping fresh basil in heavy cream and whipping it with butter and cream cheese. The distinct fusion of aromatic basil and salty tomatoes produced an incredibly wonderful and surprising cupcake. Baking was a calming activity for Dave; it helped him concentrate and grow from his mistakes. Overall, Dave's inventiveness and love of baking as a form of self-expression are evident in these tomato cupcakes with basil frosting.

Ingredients

  • 6–8 medium to large apples, or more. (Honestly, it really doesn’t matter, just keep the number of apples under the fill line.)
  • 1 tsp ground cinnamon

Instructions

  1. Wash the apples
  2. Cut up the apple — any size you want – toss the cores and seeds
  3. Place the sliced/diced apples into the Instant Pot with 1 cup of water
  4. Add a teaspoon of ground cinnamon
  5. Close the lid and set the valve to “sealing”
  6. Pressure Cook or Manual for 4 minutes.
  7. Do a QUICK RELEASE
  8. Drain excess liquid — AND KEEP THE LIQUID. (I love the cinnamon flavored apple juice and use it in a smoothie or on my oatmeal or yogurt.)
  9. Transfer the apples to a food processor, blender, or use an emulsion blender and blend until it’s the texture you like.
  10. Enjoy!
