Ingredients

14.75 oz can of salmon – pink or red
4 eggs slightly beaten
salt and pepper to taste
1 cup sour cream
1 cup crushed corn flakes (or panko bread crumbs)
2 Tbsp minced green onion or any kind of onion
butter and oil to fry/saute

Instructions

Pour off juice from salmon and remove skin and bones
Flake salmon and mix with all ingredients
Coat pan with oil and butter… I do this by feel/look… I am guessing about 2 tbs butter and some oil… so it coats the pan… not a “deep fry” of oil but enough to have them cook “crispy.”
Spoon salmon mixture — a heaping tablespoon-ish — into frying pan to make patties
Flip when brown on one side. Should make 12 patties…. ish!
