Funky Chunky Pumpkin Rice Pudding from Instant PotLuck

This Instant Pot recipe for Funky Chunky Pumpkin Rice Pudding is gluten and dairy free.  No refined sugar.

Easy to make and the perfect comfort food and dessert.

Serve it warm or cold.  Yields 6 – 3/4 cup servings.


  • 1 cup dry Lundberg Essences California Basmati Brown Rice
  • 1 cup water
  • 1 1cups plain unsweetened almond milk – (you may also use Pacific Natural Foods – Organic Almond Non-Dairy Beverage, Low Fat Vanilla, Unsweetened)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  •  1 oz Funky Chunky Sea Salt Caramel Popcorn
  • 1cup Farmers Market Organic pumpkin 
  • 1 packet Stevia leaf herbal extract
  • 1/4 tsp pumpkin pie spice
  • Pinch of Sea Salt


You can soak the rice for 15-20 minutes with a cup of water in the IP before cooking… or just rinse it. I’ve done it both ways and both have worked.

Add Rice, Water, Milk, Vanilla, and Cinnamon and stir.

Add lid to Instant Pot and make sure valve is set to sealed.

Use PORRIDGE setting. (20 minutes)

When done, do a natural release (10 minutes)

Add 1/2 cup of pumpkin, 1/4 tsp pumpkin pie spice, 1 pack of stevia, and stir.

Top with Funky Chunky Sea Salt Caramel

Serve warm or cold.  For extras, you may add more cinnamon, whipped cream, maple syrup, or additional almond or coconut milk.




This recipe yields 6, 3/4 cup servings which is 3 WW Smart Points. (1 oz of Funky Chunky popcorn is the amount used for the smart point calculation.)
