I love rice pudding and I love and popcorn. But not just any popcorn. I’ve discovered the BEST popcorn. It’s called Funky Chunky. They have several flavors, but the Sea Salt Caramel popcorn is so outrageous… decadently drenched and drizzled in dark and milk chocolate, caramel, and sea salt — with cashews, I fell instantly in love. (That hasn’t happened in a while.) So, what could possibly make this any better? When you you have a craving for rice pudding. And it’s fall. And you need something “pumpkiny” — you make Funky Chunky Pumpkin Rice Pudding. (Say that three times fast!)
So, how did I happen upon my latest addiction? While attending a trade show back in July at McCormick place in Chicago, I came upon a booth and had the opportunity to learn about Funky Chunky… and after several tastes, Instant PotLuck and Funky Chunky decided to work together to create original recipes using their popcorn in a variety of recipes Instant PotLuck would develop. It’s a perfect combination, sorta like when peanut butter found chocolate. But this goes to a whole other level.

What makes this popcorn so unique is it’s salty and sweet and crunchy texture. It achieves it’s “Oh-My-God-I’m-Dying” rating by the way it’s covered… it is actually more like “bark” than just a “drizzle.”
I had to laugh because after I shot this picture… it looks like Funky Chunky also needed to take a taste. It’s eating it right from the bag! (Trust me, I didn’t plan this shot!)

Serve it warm or cold. Add a bit of extra coconut or almond milk, or a dollop of whipped cream (vegan or otherwise.) This recipe is decadent and delicious and here’s the skinny on it:

Ingredients
- 1 cup dry Lundberg Essences California Basmati Brown Rice
- 1 cup water
- 1 1⁄2 cups plain unsweetened almond milk – (you may also use Pacific Natural Foods – Organic Almond Non-Dairy Beverage, Low Fat Vanilla, Unsweetened)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1 oz Funky Chunky Sea Salt Caramel Popcorn
- 1⁄2 cup Farmers Market Organic pumpkin
- 1 packet Stevia leaf herbal extract
- 1/4 tsp pumpkin pie spice
- Pinch of Sea Salt
Instructions
You can soak the rice for 15-20 minutes with a cup of water in the IP before cooking… or just rinse it. I’ve done it both ways and both have worked.
Add Rice, Water, Milk, Vanilla, and Cinnamon and stir.
Add lid to Instant Pot and make sure valve is set to sealed.
Use PORRIDGE setting. (20 minutes)
When done, do a natural release (10 minutes)
Add 1/2 cup of pumpkin, 1/4 tsp pumpkin pie spice, 1 pack of stevia, and stir.
Top with Funky Chunky Sea Salt Caramel
Serve warm or cold. For extras, you may add more cinnamon, whipped cream, maple syrup, or additional almond or coconut milk.
Voila!

This recipe yields 6, 3/4 cup servings which is 3 WW Smart Points. (1 oz of Funky Chunky popcorn is the amount used for the smart point calculation.)
