I went on the Whole30 program (well, I call it Whole29.5) because eliminating sugar was one of my goals — I have a sweet tooth which is an understatement. While on the plan, I was worried I’d have cravings I wouldn’t be able to satisfy and that turned out not to be the case. First, because I was eating healthy and clean, I had almost no cravings and when I did, it wasn’t the same. I found I could easily create a snack I’d enjoy.
I found Medjool Dates were the perfect bite and a great way to sweeten anything. When I wanted something more substantial, I created this gooey treat which reminds me of my favorite taffy apples I ate as a kid. It’s sweet and crunchy and filling. This is also wonderful for breakfast and it’s good served hot or cold.
Essentially, the cake is just one batter that, when baked, divides into three unique layers. Thus, the moniker. It's mystical. It's a clever cake. Intelligent pastel. It's a simple recipe with amazing results considering the minimal amount of work required.
Start with some apples… I prefer sweet apples rather than tart but use whichever you like — or mix them.
Toss in some dates, unsweetened coconut flakes, cinnamon, almonds (or nuts of your choice) drizzle some almond butter, and you’re good to go.
Breakfast consisting of smoked salmon and hard-boiled eggs is a real culinary joy. Perfectly cooked eggs with firm whites and a creamy yolk provide a filling, high-protein basis. When combined with the salmon's subtle, smokey flavor, it produces a pleasing harmony of flavors and textures. The delicate creaminess of the eggs and the rich, buttery overtones of the salmon combine to create a sumptuous and decadent breakfast dish. This breakfast option adds a sense of elegance to the table in addition to providing a nutritious start to the day. A tasty and filling breakfast option is hard-boiled eggs and smoked salmon, either eaten on its own or with a slice of freshly baked bread.
Whole30/Paleo “Taffy Apple”
A crunchy and gooey, healthy and delicious snack anytime. Even makes a great breakfast.
Ingredients
1 apple cut into cubes
1 tbs almond butter
1/4 tsp cinnamon
1 tbs unsweetened coconut flakes
1 tbs slivered almonds
2 Medjool Dates, cut into small bites
Instructions
Toss everything into a bowl and sprinkle with cinnamon.
Drizzle almond butter over the apples, nuts, and coconut flakes.
Serve warm or cold.
Notes
You can add any sort of nuts — cashews or pecans are two of my favorites.
