I love applesauce as many know. It’s my go-to recipe and apparently everyone loves it, too. I also LOVE peaches. And even when they aren’t in season, I make them anyway (I use frozen) as they create an array of options to enjoy from breakfast to dessert. First, peaches kick up the already amazing applesauce and peach compote on its own is a flavorful comfort food I just adore.
So, here’s an easy recipe for Instant Pot peach compote that requires NO peeling, it’s ready in 1 minute, and get this: it’s ZERO WW Smart Points. (You’ll also want to check out the amazing Peach Cheesecake Mousse and Blueberry Fool recipe from Chef Kym at The Gage restaurant in Chicago who was kind enough to share her brilliance.)
I add peach compote to my chia seed oatmeal and serve it warm for breakfast. I sometimes add nuts and other fruit when the mood strikes…
I also love it as a dessert with non-fat yogurt… which is also Zero Smart Points. (And yes, these adorable mini glass jars are available, too. And each comes with a lid.)
You can make this recipe solo — Peach Compote on its own, or combine it with apples to create a lovely peach applesauce. Personally, many recipes call for sugar but I never use it as the fruits are sweet on their own. If you need a little extra sweetness, you can of course add sugar, or honey or some natural Stevia.
